For those of you who follow my Instagram @Mondayschildblog you will know by now my ‘borderline obsession’ with my favourite meal – Breakfast. (Which I will happily eat at any time of the day!)
Prepared with unsweetened Almond Milk, I always mix in a heaped teaspoon of Chia Seeds and let these soak and heat on the oven hob for a few minutes (enough time for me to make a cup of tea – which for me is always Teapigs – and soak some Goji berries, if using.)

Other options for variety could include using different varieties of milk? KoKo coconut milk offer Strawberry & Chocolate flavours in their range.
This picture above was made cooking the diced up ripe strawberries which turned the milk pink! I think this could be a great idea for a charity ‘Breast Cancer Awareness’ breakfast campaign.
It has so far only been a thought – but I have been in touch with Rude Health cereals via Instagram to share my idea – Breakfast AND raising money & awareness for breast cancer, seems a perfect match to me. Let me know if any if you have any further thoughts/suggestions regarding this matter 🙂 x
